Pizza Rice Cakes

Pepperoni is always a fan favorite, but be sure to test out different toppings like turkey sausage, pesto, or mushroom and olive! Ingredients
- 6 brown rice cakes, salt free
- 6 slices low sodium pepporoni
- 1/3 cup pizza sauce
- 1/3 cup skim mozzarella
- 1/4 cup green bell pepper, diced
- 1/4 cup black olives, sliced
Instructions
- Preheat oven to 400 degrees.
- Dice vegetables.
- Layer pizza sauce on rice cakes.
- Sprinkle cakes with 2/3 mozzarella cheese.
- Layer with additional toppings.
- Sprinkle with remaining cheese.
- Bake for 10 minutes, or until cheese melts.
- Enjoy!
