Spicy Deviled Eggs

Who else has a ton of leftover hard boiled eggs from Easter? I know I do. I absolutely love deviled eggs so I thought I’d take the traditional recipe & put a healthy and spicy spin on it! Spicy pickles and chopped bacon give the creamy filling the perfect crunch! Eggs are a great source of protein and healthy fats, and they’re perfect for an on-the-go snack! Serve this yummy dish as an appetizer at deviled eggs at your next get-together. They will not disappoint!

Ingredients

  • 6 whole eggs, boiled and peeled
  • 1.5 tbsp light mayo
  • 1.5 tbsp plain, non-fat Greek yogurt
  • 1 slice turkey bacon
  • 2 tbsp spicy pickles, chopped
  • Green onion, thinly sliced
  • Spices: chili powder, paprika, salt and pepper

Instructions

  • Boil eggs in a saucepan with water for about 7-8 minutes (for a medium-boiled egg).
  • While the eggs are boiling, cook turkey bacon in a medium skillet. Chop and set aside.
  • In a small bowl, combine remaining ingredients and spices.
  • Slice each egg in half lengthwise and fill with combined ingredients.
  • Garnish with green onion and chopped bacon.
